What is Fume Blanc?    
Fume Blanc is the same grape as Sauvignon Blanc. Fume Blanc refers to the smoky flavors that occur when the Sauvignon Blanc wine has been aged in oak. Sauvignon Blanc is a light wine that is crisp and acidic. It is usually a dry wine. The aromas and flavours are herbaceous, grassy, hay, citrus, and grapefruit. Sauvignon Blanc is very food friendly. It is great with white fish, shucked oysters, and light foods.  Filet of Sole, breaded and fried with a tartar sauce is a great match.
About The Wine
This 2016 Fume Blanc has aromas and flavours grapefruit, lemon curd, marzipan and lanolin with some herbaceous notes. The acidity is mellow and the finish has a cleansing phenolic twang to it, almost reminiscent of some Rhone varietals. The texture from the oak integration is refined and mouth filling.

This is an awesome oaked Sauvignon Blanc (Fume Blanc). It is light yellow in colour and has an incredible silky-smooth mouth feel due to the oak integration. There are beautiful flavours of melon and peach with a nice crisp acidity on the back. A great Fume Blanc which will be an awesome food wine. The wine maker has also used minimal intervention techniques without irrigation, hand picking, crushed by foot and with no filtration.  Absolute bargain at $13.00 per bottle.
About The Producer
The wine maker who produces this awesome minimal intervention Mt Barker Fune Blanc 2016 makes wines that are uniquely expressive of their origins. They currently lease and manage four small vineyards in the Mount Barker and Porongurup sub-regions of Western Australia’s Great Southern. They feel that the cool climate and ancient decomposed granite soils of the Great Southern lends itself to low yielding vines producing high quality fruit, which is necessary to make expressive minimal intervention wines.
We farm our vineyards using organic practices eschewing the use of synthetic chemicals. We don’t irrigate our vineyards forcing the vines to send roots deep into the sub-soil. Our fruit is all hand harvested and crushed by foot, commonly employing whole bunches including the stalks. Both primary and malo-lactic fermentation occur spontaneously with native yeast and bacteria. Movement of the wine is kept to a minimum and no fining or filtration is used. We believe that these practices as well as being better for the environment, help create delicious wines that express a sense of place.
About the region:
Mount Barker is one of the 5 nominated subregions of the in Western Australia, which is Australia's largest wine region with a rectangle 200 kilometres from east to west and over 100 kilometres from north to south. The area has been described as 'the birthplace of the Great Southern wine region' and has won numerous awards for a variety of wines.[9] Situated as it is in the middle of the Great Southern, the continental aspects of the climate make this quintessential country for Riesling and Shiraz. Mount Barker's continentality also means greater diurnal temperature fluctuations and the occasional spring frost. The Plantagenet Plateau, with Mount Barker its centre point, is marked by its marri soils, lateritic gravelly/sandy loams coming directly from granite rock protrusions.

Wine Notes
Light yellow with green tinges.

The aromas and flavours are difficult to single out but include grapefruit, lemon curd, marzipan and lanolin with some herbaceous notes.
Oak Treatment:
100% Whole Bunch fermentation and matured in old French oak casks. All the ferments eventually ended up in old French oak for at least a couple of months where they finished Malo-lactic fermentation, before most were recombined for the final blend. Bottled unfined and unfiltered.
